Hand Made On Vancouver Island

Pétillant Naturel

2018

Siegerrebe

Making “Pét-Nat”, as this style is lovingly called, is fascinating in its simplicity. When fermentation is nearly complete, the wine is bottled with crown caps and left to ferment in bottle. This leaves the wine in the bottle unfiltered, cloudy, off-dry, lightly bubbly (pétillant), and delightful. That’s it. It gets poured in the glass just a few months after it’s bottled.

Siegerrebe

Portrait, our flagship wine, is a dedication to our founder Hamish Crawford and the almost forgotten variety Siegerrebe that Hamish planted here back in 2008. The “Sieg” grows extraordinarily well here. Getting overripe in most areas of the world, our cooler climate slows ripening and keeps the wine fresh.

Little Red Combine

2018

Red Blend

Each vintage we co-ferment our Estate Pinot Noir, Leon Millot, and Marechal Foch. Blended from the start, the unique flavors of each variety become one. In many ways similar to a lighter bodied Pinot Noir, drink with lamb rigatoni, fish, or a wood fired pizza.

Barrel Select

Siegerrebe

2018

When wine sits in barre a slow oxidative evolution occurs bringing out a rich brioche mouthfeel that can only be derived from aging on the fermentation lees. The Barrel Select was fermented and aged in French Oak Barrels, highlighting the grapes savoury notes and providing a more broad and luscious palate weight. This is our island answer to a warmer climates chardonnay.

Roost Red

2018 Okanagan Valley

Merlot/Syrah Blend

We grow many delicious things here on the farm, but sadly Merlot just can’t be one of them. Produced for us in the warmer climate of the Okanagan, this is a Blend of two big bodied red varieties producing a wine with abundant berry fruit character, and juicy tannins.  This wine can hold its own next to big flavored food, like the burger, the strip loin, and of course wood fired pizza.

Farmers Daughter

Rose Wine

2019

The Farmer’s Daughter is named in honor of Sarah Bohl who grew up here on the Roost Estate and helped to make the Roost what it is today. It is blended from Estate Pinot Noir and Siegerrebe. Around the world Rosé is  made with one sole purpose – to bring people together. Pair our Rosé with good friends and a summer afternoon.

Highland Bramble

Blackberry Port

Picked at peek ripeness, this port style wine is bursting with juicy blackberry flavor. To build a more complex blend, we follow in the tradition of fine sherry, fortifying the wine and utilizing a “solera” – an intricate system of fractional blending where each bottling pulls a bit from every vintage ever made. Thus, every bottle has a bit of the old and a bit of the new, adding complexity and intrigue but retaining vibrancy.

Sweet Ginger

Ginger Aperitif

This heady brew, is made from an astonishing amount of fresh ginger, macerated right into our Estate Grown Siegerrebe, and aged for nearly a month. Drink straight up, heated, or mixed into a Whiskey Mac, a popular drink in Hamish’s Native Scotland..
